Arkle's Vegan Recipe of the Day for July 23rd, 2011: Tortilla Lasagna
2 t Olive Oil
2 Zucchini cut in half and sliced
3/4 c frozen corn
7 oz jar roasted red peppers
1 3/4 c Daiya cheese (mix mozza and cheddar flavours) I do still feel weird about referring to items that are vegan friendly by non-vegan friendly terms, but, hey if I can watch David Lynch movies without getting confused...
1 c salsa, drain extra liquid
6 6" tortillas
Preheat oven to 500F. The hottest temp I've given yet I believe.
Add olive oil to large skillet and heat, add zucchini and peppers
In bowl shred and mix cheeses
Trim sides of tortilla to fit loaf pan, layer tortillas, veggies, cheese and salsa
Cover with foil, bake for 15 minutes
Please folks, keep in mind recipes are a guideline. The Italians add
garlic and onions to almost everything they make (unlike us Irish, we add Guiness and short tempers. *wink*). If you don't like
zucchini use spinach, mushrooms, eggplant; whatever tickles your fancy.
